At its heart, a jasmine green tea mousse, delicate, floral and serene like a moonlit garden. It wraps around a bright pomelo and grapefruit compote, a burst of citrus light, very refreshing as autumn air. Beneath, a sunflower seed crumble adds warmth and texture, grounding the flavours with gentle earthiness. All held together by a soft chiffon sponge, airy yet full of grace.
